Scone recipe

I could also bribe my volunteers to come to early morning meetings with these scones, so I thought I'd share it here.


Raisin Scones

Preheat oven: 425degreesF.

2 cups flour
3 Tbl sugar
3 tsp baking powder
1/2 tsp salt

5 Tbl butter (cold, diced into little cubes)

1 egg, slightly beaten
1/2 cup milk
1/4 tsp lemon or orange zest
(1/2 tsp vanilla optional)

1/2 cup raisins, soaked in warm water

-Whisk egg into the milk and add the zest (and vanilla). Set aside.
-Sift the dry ingredients together.
-Cut butter into the flour until the flour resembles course sand.
-Add milk/egg/zest mixture and stir with a fork. Combine gently, then add raisins.
-Knead dough in the bowl gently 15 times, adding flour as needed to make dough not-too-sticky
-Flatten dough on floured plastic wrap on counter (or floured board) to 1/2"
-Cut with 2" biscuit cutter and place on greased pan, 1/2" apart (brush with egg wash* if desired)
-Bake 12 minutes or until lightly browned.

(alternatively, you can make one round circle at 1/2" high on the baking sheet. Cut into triangle shapes, like a pizza and spread slices out to 1/2" apart)

(can also try dried cranberries or cherries instead of raisins)

*egg wash = one egg slightly beaten with 1 tsp of water or cream
